  • The first three pictures are the evolution of a new fave based on a conversation that started on Plurk. See, Amanda from Shamelessly Sassy mentioned that she loves macaroni and tomatoes; it sounded simple enough, cheap enough and yummy enough that I *had* to try it. In the right proportions, it's even healthy enough that I can easily work it into my daily nutrition goals, even as evolved into more deliciousness. I'm totally addicted now.
  1. Day One: Macaroni, a can of diced tomatoes, and I added a little Italian seasoning and some Italian blend cheese.
  2. Day Two: Added one of those little breaded beef patties (6 for $1.38 at my cheap store!), and some additional Italian blend cheese.
  3. Day Three: All as above but with the beef patty under the broiler a bit longer and about 1 tablespoon reduced fat sour cream mixed into the pasta. Oh my.
  4. Day Four: Total addict.
  • Simply Sour Cream Chicken Enchiladas - my favorite recipe for these, but done healthier using reduced fat sour cream and cheese, whole wheat tortillas and canned chicken breast and stopping at just one but having it with yummy Easy Corn Fritters and already super low fat canned refried beans.

  • The whole bike thing - shortly after visiting all the Weekly Winners last Sunday, I went and bought a granny bike, and I am totally smitten.

Macaroni and tomatoes - a hated dish from my childhood - ironically a well-loved one, now. I don't know when it was I 'got over' cooked tomatoes, but I sure do love them now. :)

Those bike shots are way cool!

Also, the flowers... I <3 flowers! The kind of evil ones (seed pods, those) and the bluish-purple are the same plant, called love-in-a-mist. My dad grows huge spaces full of just those in that color, also pink, and white. It's one of my very favorite flowers!

And that simple lunch and I are having a love affair. I'm graving avocados and tomato now! ;-)

For those asking about the "Almost Evil Funkiness" shots, Lotus has given them their proper name a few comments up.

They are the seed pods of a flower called love-in-a-mist, which is the same flower as the bluish-purple one that I loved. You can find more here.
